    I have stalked this board for months now and promise myself that I will comment but never did. I've also made about 6 recipes and love everyone one. I will try this the next time I make Roti, however by far my favorite is the 圭亚那人Pholourie (it's what brought me to this blog in the first place).

    What kept me coming back is your amazing pictures and your measurements. Growing up with my mother who wrote nothing down and insisted on a pinch of this, and dash of that, to a measurement challenged daughter, this blog is a heaven. Thank you!!

    Hey, your so lucky to have gas stove…this is the best way to make Baigan Choka, I normally make mine using an indoor grill. But I do not use all these spices. Now I have to try your version.

    Btwa I notice its been a while since you blogged. I just found your blog, but I love it. Please keep blogging. looking forward to more recipes.

    Hi Robyn,

    THANK YOU! Your recipes are really helpful and good. I roasted an eggplant on the gas stove a few weeks ago and have just managed to clean it all off. Twice wrapped in foil is going to make my life MUCH better!

    Hi there, yes the foil will burn a little, but it helps to keep the eggplant in place. If you roast without the foil the juices from the eggplant will leak out and create a bigger mess on your stove. Sorry this didn't work for you. I do use a heavy duty foil. You can try double wrapping the eggplant in foil.
